Guacamole! Eaten with nummy tortilla chips and salsa. Or chopped up in salads, etc. Google "avocado recipes". They're really good for you but very high in fat. The good kind of fat tho. :-)
Hurray! You are the only person I know who's said you could stand to gain some weight! Since '03 I lost a lot of weight and got to my target weight BUT since then I have lost another 20 lbs below the goal weight. ;-/ So all of a sudden ice cream and cheese are my favorite foods! ;-)

I love guacamole...I'm trying to eat differently, more healthy stuff. I'm not too worried about fats..hehe...I could stand to gain some weight!
I love them on sandwiches and in salads.
I could eat them every day for every meal.
